Ayam Rarang originates from Rarang Village in East Lombok, West Nusa Tenggara. It is from this village that the dish derives its name. Legend has it that the dish began at a humble eatery—which still stands today, virtually unchanged in form and size since its inception—as a tribute to the culinary creation’s history. Nowadays, vendors selling Ayam Rarang can be found not only in Rarang Village but also across various regencies and cities throughout Lombok Island.

Visually, Ayam Rarang features free-range chicken (ayam kampung) that is first deep-fried until cooked through, then smothered in a fried chili sauce (sambal goreng) made from bird’s-eye chilies, shallots, and other select spices. This process gives the chicken a vibrant, fiery red hue; at a glance, it appears far spicier than Ayam Taliwang, which tends to have a reddish-brown color due to grilling. The scattering of bird’s-eye chilies clinging to the chicken’s surface further reinforces the impression of intense heat.

Interestingly, despite its intimidatingly spicy appearance, the flavor of Ayam Rarang is not as aggressive as it looks. The taste is fresh and appetizing, offering a level of spiciness that is enjoyable without leaving the tongue feeling truly “burned.” The combination of tender free-range chicken and the perfectly infused chili sauce creates a complex flavor profile—savory, spicy, and with a hint of sweetness from the caramelized spices during frying.

Like Ayam Taliwang, Ayam Rarang is rarely eaten in isolation. It is typically served with sambal beberuk terong—a fresh relish made from raw round eggplants, tomatoes, long beans, and a squeeze of lime, which provides a fresh acidity to balance the chicken’s heat. Plecing kangkung (spicy water spinach) and warm white rice are also almost always included as accompaniments in a serving of Ayam Rarang.

For tourists visiting Lombok—particularly the Mandalika and East Lombok areas—Ayam Rarang is a must-try dish that rounds out the authentic Sasak culinary experience. Its widespread presence across the island demonstrates how Ayam Rarang has evolved from a humble home-cooked meal into a source of culinary pride for Lombok, standing alongside the globally renowned Ayam Taliwang.

The post Ayam Rarang: An Addictive, Fiery-Hot Sensation from East Lombok appeared first on Lombok Sumbawa Tourism.

Sate Rembiga is a culinary specialty of Lombok, West Nusa Tenggara, known for its spicy, savory, and slightly sweet flavor. The name “Rembiga” refers to the Rembiga sub-district in Mataram City, where the dish originated. Unlike other satays, which are served with peanut sauce, Sate Rembiga’s flavor comes from the spices that penetrate the meat.

Sate Rembiga typically uses beef cut into small pieces. Before being grilled, the meat is first seasoned or marinated to allow the flavors to penetrate. The marinade uses unique ingredients such as chilies, onions, shrimp paste, tamarind, brown sugar, and spices like coriander and candlenuts. This combination of ingredients produces a strong, flavorful seasoning that is the hallmark of Sate Rembiga.

After being seasoned, the pieces of meat are skewered and grilled until cooked through. The grilling process intensifies the aroma of the meat and spices, while also imparting the distinctive aroma of satay grilled over hot coals. The marinade, which has seeped into the meat, makes each piece savory and rich in spices, with a spicy flavor that is the main characteristic of this dish.

The spicy flavor of Sate Rembiga is one of the things that sets it apart from other types of satay. The use of a specific amount of chili peppers provides a strong spicy sensation, while brown sugar provides a touch of sweetness that balances the flavors. This combination of spicy, savory, and slightly sweet gives Sate Rembiga its distinctive and easily recognizable flavor.

Sate Rembiga can be enjoyed with white rice, lontong (rice cake), or ketupat (rice cakes). This dish is also best enjoyed warm, as the grilled aroma and spices are more pronounced. The presentation varies from place to place, but the main characteristic of Sate Rembiga is the spicy, seasoned beef.

Sate Rembiga is part of Lombok’s culinary richness, showcasing the strong use of chilies and spices in regional cuisine. From simple cuts of beef, a dish with bold and distinctive flavors is created. Its existence also demonstrates how regional cuisine can develop into an integral part of a region’s identity.

With its marinated meat, mouth-watering grilled aroma, and blend of spicy, savory, and slightly sweet flavors, Sate Rembiga offers a unique culinary experience from Lombok. This dish showcases the rich flavors of Lombok through a simple yet distinctive dish.

The post Sate Rembiga, a Spicy Lombok Special Cuisine appeared first on Lombok Sumbawa Tourism.

When exploring the island of Sumbawa in West Nusa Tenggara, Indonesia, one culinary experience that should not be missed is tasting Singang—a traditional dish deeply rooted in local heritage and bursting with rich, authentic flavors.

What is Singang?

Singang is a traditional sour and spicy fish soup, commonly made using freshly caught sea fish, such as snapper or tuna. The fish is cooked in a vibrant broth made from natural spices like turmeric, chili, shallots, garlic, and tamarind, giving it a striking reddish hue and a refreshing, bold flavor.

What makes Singang stand out is its zesty combination of sourness and spiciness, which perfectly complements the warm tropical climate of Sumbawa. Besides its delicious taste, this dish is also considered to have health benefits due to its use of traditional spices and herbs.

A Dish of Culture and Togetherness

In many Sumbawan households, Singang is more than just food—it’s a symbol of togetherness and cultural pride. It is often served during family gatherings, community celebrations, and even traditional ceremonies, where each bowl tells a story of family heritage and local wisdom.

Different areas of Sumbawa have their own versions of Singang, with some adding local touches like basil leaves, native tomatoes, or side dishes such as sambal sepat and corn rice.

Where to Enjoy Singang

You can find Singang in various traditional eateries and warungs across Sumbawa, especially in Sumbawa Besar, Taliwang, and coastal towns. A popular place to enjoy this dish is at Singang Ikan Taliwang eateries, where family recipes are passed down through generations to preserve the authentic flavor.

For culinary enthusiasts and cultural travelers, tasting Singang offers a meaningful experience that goes beyond food. It’s an immersion into the traditions, flavors, and soul of the Sumbawan people.

Singang is not just a dish—it’s a celebration of Sumbawa’s identity. Each spoonful connects you to the island’s history, the warmth of its people, and the richness of Indonesia’s diverse culinary heritage.

The post Discovering Singang: A Bold and Flavorful Culinary Treasure from Sumbawa appeared first on Lombok Sumbawa Tourism.
